ポケ (Poke)
Poke Bowl

Poke is a dish of finely chopped raw fish served as an hors d'oeuvre or main course in Hawaiian cuisine. A modern, more Western variant of the dish is called poke or poke bowl.

Preparation time about 120 minutes.

Recipe for 4 persons.

  • Sushi rice, about 400 gr uncooked
  • Cucumber, 1/2
  • Carrot, about 200 gr
  • Avocado, 2 pieces
  • Edamame beans, half a package
  • Salmon or shrimp, about 300 gr
  • Tempeh or tofu, about 200 gr
  • Tamago egg, 4 big pieces
  • Soy sauce
  • Sesame oil
  • Rice vinegar
  • Sesame seeds

  1. Boil the sushi rice according to the description on the packaging
  2. After it is ready, stir in some rice vinegar and let it cool on a plate for an hour.
  3. Place 2 tablespoons of soy sauce together with 1 tablespoon of sesame oil in a sealable container.
  4. Cut the salmon small, if you use shrimp, leave them whole, but fry them in advance. Place this in the container with soy sauce and sesame oil. Stir well and refrigerate until ready to serve.
  5. Prepare the tamago according to the recipe and cut it into strips.
  6. Fry the edamame beans in soy sauce and let them cool.
  7. If you use tofu or tempeh, also fry them in sesame oil with a little soy sauce and let them cool.
  8. Finely grate the carrots, or use carrot julienne.
  9. Grate the cucumber.
  10. Scoop the avocado from the peel and cut it into pieces.
  11. Divide the cooled rice among 4 bowls.
  12. And divide all the ingredients you have prepared among the 4 bowls.
  13. Make it look a bit nice and finish it off with some sesame seeds.

Of course you can put whatever you like in/on it.
